Sweet Potato Oat Brownies

I’ve never tried baking with sweet potatoes but today I decide to do some experimenting. I had an old sweet potato that needed to get eaten and some left over pulp from making almond milk so I decided to whip something together. I mean come on you can never go wrong with brownies right?

  • 1 Medium Sweet Potato

  • 1/2 Cup Cacao Powder

  • 1/2 Cup Almond Flour

  • 1/3 Cup Raw Cane Sugar

  • 1/2 Cup Oat Milk Pulp

  • 1 Tsp Baking Powder

  • 1/2 Tsp Cinnamon

  • Pinch of Salt

  • 2 Tsp Vanilla Extract

  • 1/2 Cup Homemade Vegan Milk


  1. Start by preheating the oven to 375F and bring a small pot of water to a boil to steam your sweet potato. Peel and cube your sweet potato.

  2. Take the steamed sweet potato and mash it or puree it in a blender. Take the puree sweet potato and slowly mix in the cacao powder a little bit at a time. Once it’s all combined at the oat milk pulp, raw cane sugar, vanilla, and vegan milk. Mix it all up.

  3. In a separate bowl add the almond flour, baking powder, cinnamon, and salt. Once that is combine at the dry ingredients to the wet ingredients and mix until everything is combined.

  4. Pour it into a greased baking pan and bake for 30 minutes. Let cool and then enjoy, preferably with vegan ice cream on top!
