Simple Chia Blueberry Muffins

For me colder months always puts me in the mood for baking. The aroma that fills the home is as good as lighting a candle. It makes it even better when you can turn an indulgent treat into something healthy that you don’t have to worry about snacking on.


  • 2 Cups Gluten-Free Rolled Oats

  • 1/2 Cup Almond Flour

  • 1/4 Cup Raw Cane Sugar

  • 1 Tbsp Baking Powder

  • 1/4 Cup Chia Seeds

  • A Pinch of Salt

  • 1/4 Cup Unsweetened Applesauce

  • 1 Cup Vegan Milk

  • 2 Tsp Vanilla Extract

  • 1/2 - 1 Cup Frozen or Fresh Blueberries


  1. Preheat the oven to 375°F and lightly grease a muffin pan or use cupcake papers

  2. Start by turning the oats into oat flour by blending them on high in a high power blender until it turns into a find flour.

  3. Next in a medium bowl add Oat flour, Almond flour, Raw cane sugar, Baking powder, and Salt. Give all the dry ingredients a good mix until they are combined.

  4. Now in the same bowl add the rest of the wet ingredients and mix until there are no more clumps of the dry mixture and everything is fully combined.

  5. Now fold in the blueberries until just combined. Pour the batter evenly into the muffin pan.

  6. Bake for about 20-25 minutes or until a toothpick comes out clean. Let them cool completely then enjoy!
