Pumpkin Spice Chocolate Chip Pancakes

Since Thanksgiving is now over and I'm sure everyone went all out like I did, there is probably a lot of extra cans of pumpkin puree laying around. If that's you then this recipe is perfect for you! If that's not you then I think you better run to the store and grab yourself some pumpkin because this recipe is worth it!



  • 1 cup rolled oats

  • 2 tablespoon raw cane sugar

  • 1 teaspoon baking powder

  • 2 teaspoon pumpkin pie spice (cinnamon, ginger, nutmeg, cloves)

  • 1/4 cup vegan milk

  • 1/4 cup pure pumpkin puree

  • vegan chocolate chips

  • agave or maple syrup (optional)


  1. In a blender add rolled oats and blend on high until and become a coarse flour

  2. Add the rest of the ingredients to the blended except the chocolate chips and syrup and blend on high until everything is well combined and forms a smooth batter.

  3. Transfer to a cup to make it easier to pour into the pan. In the cup add your desired amount of chocolate chips and fold them into the batter.

  4. In a non stick pan over medium heat pour about 1/4 cup of batter per pancake into the pan. Let it cook for about 3-4 minutes on each side. Keep a close eye and don't let em burn!

  5. Serve them with agave or maple syrup if desired and enjoy!
