Perfect Pink Waffles

I’ve been on a waffle kick lately. It’s one of my favorite things to cook up real quick on a Saturday morning and have for breakfast. In my opinion waffles are so much easier to make than pancakes and why not make them a little fun with some pitaya powder am i right?



  • 1 Cup Gluten Free Rolled Oats

  • 1 1/2 Cup Water

  • 1 Ripe Banana

  • 2 Tbsp Tapioca Flour

  • 1 Tbsp Baking Powder

  • 1 Tbsp Pink Pitaya Powder from Unicorn Superfoods

  • 1 Tbsp Vanilla Extract

  • 1 Tsp Cinnamon

  • 1/2 Tsp Ginger Powder

  • a Few Drops of Almond Extract (Optional)


  1. Turn on your waffle maker to allow ti to preheat and lightly coat it in oil so the waffles don’t stick!

  2. Next add all the ingredients to a high speed blender and blend on high until it is a completely smooth batter.

  3. Once the waffle maker is ready start making waffles according to your waffle makers instructions. Add any fillings you like like fresh fruit, nuts, or chocolate chips.

  4. Once they’re ready top with more fresh fruit and syrup if you’re into that and enjoy!
