Loaded Nacho Fries

Nachos are probably one of my favorite junk foods to indulge on. Another one of my favorite things to do is make unhealthy foods healthy but still taste amazing. I hope you're ready for this recipe.



Quinoa Meat

  • 1 Cup Dry Quinoa
  • 1 Can Black Beans
  • 2 Cups Water
  • 1 Cube of Veggie Bouillon
  • 1/2 Small White Onion
  • 2 Cloves Garlic
  • 2 Tbsp Chili Powder
  • 1 Tbsp Smoked Paprika
  • Salt & Pepper to Taste

French Fries

  • 2 Russet Potatoes
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1/2 Tsp Paprika
  • Salt & Pepper to Taste

  1. Start by preheating the oven to 425°F and wash all your veggies. Cut your potatoes into fry shapes however thick or thin you'd like them. Dry them off as best as you can with a towel. This will help them get extra crispy.
  2. Add them to a bowl with the spices and toss until they are all coated. Lay them on a lined baking sheet and bake for 30-40 minutes flipping halfway through. 
  3. Next preheat your pressure cooker or put a large pot on high heat. Add all the ingredients to the pot and if you're using a pressure cooker set it to the beans and chili setting and hit start. If you're using the stove top bring everything to a boil and then cover and simmer it for about 20-25 minutes or until most of the water is absorbed and the quinoa is cooked.
  4. Once everything is done build up your nacho fries with anything you like! I added my Sweet Potato Cheese Sauce, avocado salsa verde, fajita veggies, avocado, and fresh cilantro. Some other options would be fresh corn, tomatoes, olives, or jalapenos.
