Gluten Free Vegan Omelette

I’ve had bunch on my mind more often than not lately. In my mind bunch consists of lots of fancy breakfast foods. Like waffles and omelettes. That being said this recipe will make you want to make bunch everyday!



  • 1/2 Block Tofu

  • 1/2 Cup Chickpea Flour

  • 1/4 Cup Tapioca Flour

  • 1 Cup Water

  • 1/4 Cup Nutritional Yeast

  • 2 Tsp Onion Powder

  • 2 Tsp Garlic Powder

  • 1 Tsp Turmeric

  • Salt and Pepper to Taste


  1. Start by heating a non stick pan over medium heat and adding a little bit of oil. This batter loves to stick so make sure to give it as much help as you can!

  2. Add all the ingredients to a blender and blend on high until everything is a nice smooth batter.

  3. Pour the batter into the pan and it will cook similar to a pancake and get bubbly on top. Once the bubbles stop flip the pancake and let it cook on the other side.

  4. Now add in any filling you want. I went with some vegan cheese, fresh spinach, onion, mushrooms, and bell peppers.

  5. Once the other side has cooked fold it over and use something heavy to press it so everything gets nice and cooked together.

  6. Top it with some cashew cream and avocado and enjoy!
