Gluten Free Crepes
Crepes have always been something I wanted to try making at home but I could never find a recipe that would work out for me. I would always end up with pancakes which is never a bad thing it just wasn't the goal! But I have finally figured out a recipe that makes the most perfect floppy crepes and they're gluten free!
- 1/2 Cup Chickpea Flour
- 1/2 Cup Tapioca Starch
- 1 Cup Vegan Milk
- 1 Tsp Cinnamon
- 1/2 Tsp All Spice
- 1/2 Tsp Ground Ginger
- Pinch of Salt
- In a medium bowl add both the flours, spices, and salt and whisk until they are all combined. Next add the Vegan milk and whisk again until everything is well mixed.
- Heat a pan over medium heat and lightly oil it. Add about 1/4 - 1/3 a cup of the batter to the pan and swirl it around until it becomes very flat.
- It will start to bubble on top and once no more bubbles appear flip and repeat until all the batter is used.
- I served mine with banana ice cream and some fresh fruit but you can customize it to whatever mood you're in that day! Like adding peanut butter and some melty chocolate chips, or with soem coco whip and berries.
