Coconut Lentil Curry

Since it still happens to be way to cold for my liking I always turn to food to warm me up. Craving warm foods has lead me to craving curry which is something I very rarely crave. This completely satisfied my craving!

Ingredients

  • 1 Can Coconut Milk

  • 1 Can Diced Tomatoes

  • 1 Cup Brown Lentils

  • 1 Cup Water

  • 1/2 Medium Onion Diced

  • 3-4 Garlic Cloves Diced

  • 1 Red Bell Pepper Diced

  • 1 Zucchini Diced

  • 2 Tsp Cumin

  • 1 Tsp Turmeric

  • Salt and Pepper to Taste

Method


  • You can start by making this one of two ways. Either in a pressure cooker or in a pot on the stove. If using a pressure cooker add everything to the pot cover with the lid and cook on the stew setting.

  • On a medium heat in a pot add the onion garlic and bell pepper and saute everything in a little bit of water or oil until the onions are translucent

  • Next add the rest of the ingredients bring to a boil and them cover and simmer for at least 30 minutes.

  • Once the lentils are soft and everything is cooked together serve over rice and top with cilantro and enjoy!
